One thing that I love about making chocolate mousse pie...

is that I have two egg yolks left over, which means within a couple of days that I'm going to have an omelette for breakfast!

And today was that day!

It was one of those rare occasions that it actually cooperated when folded, and I ended up with a complete half-circle omelette. Ham, lots of cheese, lots of herb blends from Penzeys and Trader Joe's.

Followed by one of the Krusteaz' Orange Cran muffins with chocolate chips and walnuts. With a glass of milk.

So a good breakfast, all in all.

Sounds like a great breakfast! I'm usually too zombiefied in the morning to cook and my husband hates the whole concept of brunch, so I almost never have this sort of fancy breakfast.

I'm currently looking at a bunch of egg whites left over from a batch of custard. Not sure if I should freeze them or just make a huge honkin' egg-white omelette. Or a chocolate mousse pie???

Sadly, the pie probably wouldn't suit the person here who needs tasty treats the most.
