Generally, they explain gravity as something that bends the otherwise straight paths that people travel through the universe. At least, I think that's how they explained it to me.
And don't get me started on the theory vs. theory bit, because I will hammer someone on precision of language and nitpick them to Hell and back and have them explain everything in perfectly precise language, so they can understand how science really works.
