Slow-cooked pepper pork chops

thewayneMost people on my flist know that I'm a minor Food Network addict and major Alton Brown junkie. Well, I did these pork chops last night (actually starting Friday at 5am with the brining, nine hours in the brine and six hours crock pot) and they were wonderful. Juicy, eat it with a fork tender. The poodle also greatly appreciated the juice from the apples and onions drizzled on her food shortly thereafter.
It was followed by watching Kevin Kline's movie version of the Broadway version of Gilbert & Sullivan's Pirates of Penzance. Sadly it was a 20 year old VHS version that is still in very good shape. They really need to get a DVD version of that movie out, supposedly it's being worked on right now.
