I've had a bite of buffalo, never had bison. My wife wants me to make buffalo burgers some time, so maybe I'll also look for a couple of pounds of bison then.
BTW, here's a great burger recipe: The Burger of the Gods. Can't ask for simpler. And VERY tasty, especially with some sharp cheddar. I crunched up five pieces of cooked bacon and mixed it in with the beef.
